Ingredients

2 tablespoons butter
2 eggs , beaten
1 cup buckwheat flour ( I 've also used barley flour with good results )
3/4 cup white flour
1/4 cup whole wheat flour ( or white flour )
1 teaspoon ground flax seeds ( optional )
1/2 teaspoon salt
2 tablespoons brown sugar
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 1/2 cups milk ( I use almond or soy milk )
1 teaspoon pure vanilla extract

Instructions

1.Melt the butter in a large skillet over medium heat.
2.In a large mixing bowl, whisk together the beaten eggs, buckwheat flour, white flour, whole wheat flour (or more white flour), flax seeds (if using), salt, brown sugar, baking soda, and baking powder until well combined.
3.Gradually add the milk and vanilla extract, stirring continuously until the batter is smooth and well combined.
4.Pour the batter onto the skillet to make pancakes of your desired size.
5.Flip the pancakes when the edges start to dry and the top is bubbly. Cook until both sides are golden brown.
6.Serve hot with your favorite topping.
