Ingredients

1/4 cup all-purpose flour
1 cup buckwheat flour
2 eggs
1/2 cup milk
1 cup water
corn oil or grapeseed oil , for frying

Instructions

1.In a large mixing bowl, combine the all-purpose flour, buckwheat flour, eggs, milk and water.
2.Beat with an electric mixer until the batter is smooth and free of lumps.
3.Set the batter aside to rest for at least 30 minutes.
4.Heat a nonstick skillet over medium-high heat. Add a little oil and let it get hot.
5.Add about 1/4 cup of batter and tilt the pan to spread the batter evenly.
6.Cook for 1-2 minutes, until the edges are set and the bottom is lightly golden.
7.Flip the crepe and cook for another 30 seconds to 1 minute, until the second side is lightly golden.
8.Repeat with the rest of the batter, adding more oil to the pan as needed.
