Ingredients

1/3 cup rye flakes or 1/3 cup old fashioned oats
2 3/4 - 3 cups water
1 1/2 cups buckwheat groats
1 1/2 teaspoons dried dill or 1/4 cup fresh dill , chopped
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 tablespoon unsalted butter , plus more for preparing the pan
1 1/2 cups low fat cottage cheese
2 large eggs , lightly beaten
2 tablespoons sugar ( optional ) or 2 tablespoons honey , beaten with the eggs ( optional )
3/4 cup sour cream
1/8 teaspoon sweet paprika
Buckwheat and Cottage Cheese Casserole is a savory comfort food that can be enjoyed for breakfast, lunch, or dinner. It is a perfect dish to make when you want something warm and filling, but still healthy and not too heavy. Instructions

1.Preheat the oven to 350°F. Grease a 9x13 inch baking dish with butter.
2.In a medium saucepan, bring the rye flakes (or oats) and 2 3/4 cups of water to a boil. Lower the heat and let it simmer for 5 minutes.
3.Add the buckwheat, salt, pepper, dill, and 1 tablespoon of butter. Mix well then pour into the prepared baking dish.
4.In a separate bowl, whisk together the cottage cheese, beaten eggs, and sugar (if using). Spread the mixture over the buckwheat mixture in the baking dish.
5.Bake for 20-25 minutes or until the cheese on top is golden brown. Let it cool for a few minutes before slicing and serving.
