1 cup confectioners ' sugar
2 cups semisweet chocolate chips
2 tablespoons shortening
Buckeyes II are a classic American dessert that originates from the state of Ohio. These peanut butter balls are named after the nut that grows on Ohio’s state tree, the buckeye. Although they resemble buckeyes, they are not meant to be eaten because the nut is poisonous. Buckeyes II are easy to make and require only a few simple ingredients, which makes them the perfect dessert to whip up when you're craving something sweet. These treats are usually enjoyed during the holiday season, but due to their ease of preparation and delicious taste, they can be eaten and enjoyed year-round.

Instructions

1.In a large bowl, combine peanut butter, graham cracker crumbs, and confectioner’s sugar. Stir the mixture until it is smooth and well-combined.
2.Shape the mixture into 1-inch balls and place them onto a baking tray lined with parchment paper. Chill them until they are hard, for nearly 30 minutes in the refrigerator.
3.In another bowl, melt chocolate chips and shortening together in a microwave or a double boiler at medium heat until it is smooth and creamy.
4.Insert toothpicks into the top of each peanut butter ball, and dip it into the melted chocolate together with the toothpick.
5.Return the chocolate-covered balls to the lined cookie sheet and refrigerate until completely set. Remove the toothpick, and use your finger to smooth over the small hole.

PROS

Buckeyes II are a delightful blend of crunchy and creamy texture that will satisfy your sweet tooth.
They are easy and quick to make, require no baking, and can be stored in an airtight container in the refrigerator for up to two weeks, making them a perfect choice for a dessert that can be made ahead.

CONS

These delicious treats are high in sugar and fat and therefore should be enjoyed in moderation.
Although they are a healthier choice than other popular snacks like chips and candy, their high sugar and fat content means they should be considered a treat rather than a daily indulgence.

HEALTH & BENEFITS

Peanut butter is high in healthy monounsaturated fats and protein, making it a filling snack that can help you to feel full for longer.
