1 1/2 cups creme fraiche or 1 1/2 cups heavy cream , non pasteurized

Instructions

1.Preheat the oven to 375°F. Grease a 15 1/2-by-10 1/2 inch jelly-roll pan with butter, line the bottom with parchment paper and grease again.
2.Sift the flour, baking powder, and 1/4 teaspoon salt together.
3.Using an electric mixer, beat the egg yolks in a large bowl until thick and lemon-colored.
4.Slowly add the sugar, beating constantly until well blended.
5.Stir in the vanilla extract.
6.In a separate bowl, beat the egg whites and remaining 1/4 teaspoon salt until stiff peaks form.
7.Fold 1/4 of the egg whites into the yolk mixture.
8.Gently fold in the remaining egg whites, and then gradually fold in the flour mixture.
9.Spread the batter evenly in the prepared pan.
10.Bake for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean.
11.Sift the confectioners' sugar and cinnamon over a clean kitchen towel.
12.Loosen the edges of the cake with a knife and invert onto the towel.
13.Peel off the parchment paper.
14.Starting with a long side, roll the cake up in the towel.
15.Let cool completely on a wire rack.
16.In a double boiler, melt the chocolate.
17.Unroll the cake and spread the creme fraiche or heavy cream on top.
18.Roll the cake back up and place seam-side down on a platter.
19.Spread the melted chocolate over the cake.
