Ingredients

1 medium eggplant , diced
1/4 cup Italian seasoned breadcrumbs

26 ounces mushroom marinara sauce ( I used Newman 's Own )
1/2 - 3/4 teaspoon oregano
1/4 cup freshly grated romano cheese , plus more for serving
1 lb bucatini pasta , rigati ( I used Barilla )
chopped fresh flat leaf parsley

Instructions

1.Preheat oven to 375 degrees F
2.Spread eggplant on a paper towel-lined jelly-roll pan; coat evenly with breadcrumbs
3.Bake eggplant in the preheated oven until golden, about 10 minutes
4.Brown lamb in a skillet over medium heat, 5 to 7 minutes; drain excess fat and stir in garlic and Italian seasoning
5.Reduce heat to low and stir in marinara sauce, oregano, egg, salt, black pepper, pepper flakes, and roasted eggplant
6.Cover and simmer until hot, 10 to 15 minutes
7.Cook bucatini in boiling water until tender yet firm to the bite, about 8 minutes
8.Drain pasta and top with sauce and grated romano cheese
9.Garnish with fresh flat leaf parsley and serve
