Ingredients

1 lb bucatini pasta or 1 lb penne
8 ounces fresh mild pork sausage
2 eggplants
14 ounces canned tomatoes
olive oil
3 garlic cloves
1 pinch fresh thyme
4 basil leaves ( torn )
salt & pepper
grated parmigiano ( or Romano )

Instructions

1.Dice the eggplants, sprinkle with salt, and let sit for 30 minutes
2.Cook pasta according to package's instructions
3.In a large frying pan, break up the sausage and start sautéing over medium-high heat.
4.After 1-2 minutes, add garlic, thyme, and eggplants, and continue sautéing until the sausage is cooked through and the eggplant is tender, about 10 minutes.
5.Add tomatoes and cook until everything is heated through.
6.Add salt and pepper to taste.
7.Serve pasta in bowls, garnished with torn basil leaves and grated parmigiano.
