Instructions

4.Form the mixture into small patties and set aside.
5.In a small bowl, combine the diced tomatoes, red wine vinegar, extra virgin olive oil, and a pinch of salt and pepper. Stir to combine, then set aside.
6.In a non-stick pan, fry the patties until golden brown on both sides, roughly 3 - 4 minutes per side.
7.Serve the patties hot with the tomato salsa on top.
