Ingredients

1 carrot , peeled and chopped into medium sized pieces
1 parsnip , peeled and chopped into medium sized pieces
1 potato , chopped into medium sized pieces
1/4 celeriac , chopped into medium sized pieces
2 handfuls chopped savoy cabbage
handful chopped kale
1/4 leek , chopped into rounds
knob butter
salt & freshly ground black pepper
1 tablespoon olive oil
1 tablespoon flour
1 red onion , sliced
175 ml red wine
2 sprigs fresh thyme
1/2 liter vegetable stock
1 teaspoon aged balsamic vinegar
2 large free-range eggs or 2 large organic eggs

Instructions

1.Start by preparing the Bubble & Squeak cakes. Boil all the chopped vegetables in a large saucepan for about 15-20 minutes or until soft. Drain the vegetables and leave to cool for 5 minutes.
2.In a large mixing bowl, add the boiled vegetables, chopped savoy cabbage and kale. Mash all the vegetables together with a fork or a potato masher, add salt and black pepper and mix well. If the mixture is too dry, add a knob of butter to it.
3.Heat a tablespoon of olive oil in a non-stick frying pan and add spoonfuls of the vegetable mixture into the pan. Fry for approximately 4-5 minutes on each side until golden brown and crispy.
4.For the gravy, heat a tablespoon of olive oil in a separate pan and add the sliced red onion. Cook for 5-7 minutes or until softened. Sprinkle flour over the onions and stir for a minute. Add the red wine, thyme, balsamic vinegar and vegetable stock. Simmer for 20-25 minutes or until the gravy thickens.
5.Serve the Bubble & Squeak cakes hot with the Red Onion Gravy poured over the top.
