Ingredients

3 small onions
1 tablespoon sunflower oil
1 leek
1/4 savoy cabbage , shredded
1/4 celeriac , chopped
4 garlic cloves
200 g vegan bacon
1 teaspoon rosemary
1 lb potato
2 ounces soya margarine
2 tablespoons soya milk
salt and pepper
Bubble and Squeak is a classic British dish, traditionally made using leftovers from a Sunday roast dinner. It is a mixture of mashed potatoes and cooked vegetables, all fried together until crispy on the outside. This vegan version uses vegan bacon in place of meat and includes a range of vegetables, including the often-overlooked celeriac. Bubble and Squeak makes a delicious and comforting meal, perfect for a winter evening or a lazy weekend brunch. Serve it with a side of steamed green beans or a poached egg for an extra protein boost.

Instructions

1.Peel and chop the potatoes into chunks. Boil in a pan of salted water for 20-25 minutes.
2.Preheat a large frying pan with the sunflower oil. Peel and slice the onions into thin wedges. Fry for a couple of minutes.
3.Cut the leek into thin rounds and add to the frying pan. Continue to cook for 5 minutes until they have started to soften.
4.Chop the celeriac into small chunks and crush the garlic cloves. Add both to the pan and cook for a further 5 minutes.
5.Chop the vegan bacon into small squares and add to the pan. Continue to cook for a further 5 minutes until it is browned and crispy.
6.Add the shredded cabbage to the pan along with the rosemary. Stir well and fry for 5 minutes until it has softened.
7.When the potatoes are cooked, drain and mash them. Add the margarine and soya milk and mix thoroughly. Add salt and pepper to taste.
8.Add the mashed potato to the frying pan and mix well with the vegetables. Continue to cook the bubble and squeak for a few minutes longer until it is heated through and the edges begin to brown.
