Instructions

1.Preheat oven to 180°C (160°C fan-forced). Grease a shallow 20cm (base measurement) square ovenproof dish.
2.Combine zucchini, carrot, frozen peas, corn, garlic and water in a large microwave-proof bowl; cover with cling wrap. Pierce wrap in several places with a knife. Microwave on high for 4-6 minutes or until vegetables are tender. Drain well.
3.Add spring onions, cheddar cheese, feta cheese, eggs, milk, herbs, flour and salt; mix well. Pour mixture into the prepared dish.
4.Arrange cherry tomatoes on top; sprinkle with torn basil, if using. Bake for 30-35 minutes or until set and golden.
5.Cut into slices; serve.
