1/2 cup panko-style breadcrumbs , available from Asian stores and from good fish shops ( substitute 1 cup fresh breadcrumbs , drying them on a tray in a warm oven for an hour )
2 teaspoons unsalted butter , melted
2 teaspoons finely chopped flat leaf parsley
1 lemon , zest of ( use half in the gratin , half in the sprouts mixture )
40 g gruyere cheese , grated
1 1/2 teaspoons salt ( plus more to taste )
1/2 teaspoon fresh ground black pepper , plus more to taste
4 garlic cloves , unpeeled
3 tablespoons olive oil
500 g Brussels sprouts , rinsed , peeled and halved
6 shallots , peeled and thinly sliced
3 slices bacon , chopped
1 tablespoon lemon juice
1 tablespoon unsalted butter
2 teaspoons flour
1 cup cream
2 sprigs fresh thyme
30 g gruyere cheese
30 g parmesan cheese , grated

Instructions

1.Preheat the oven to 375°F (190°C).

5.Transfer the sprouts mixture to a large baking dish and sprinkle the breadcrumb mixture on top. Bake for 20-25 minutes until golden brown and bubbling.
