1 1/2 lbs Brussels sprouts , halved
1 onion , minced
2 -3 garlic cloves , minced
1/2 bunch parsley , minced
2 tomatoes , chopped
1 tablespoon tomato paste
1/2 cup olive oil
water
oregano
salt

Instructions

1.Heat a large pot on medium heat and add olive oil.

5.Add the halved Brussels sprouts and enough water to cover them.
6.Bring to a boil, then reduce heat to low and simmer for around 30 minutes or until the Brussels sprouts are cooked and the sauce has thickened.
7.Sprinkle minced parsley on top before serving.
