1/2 cup chopped fresh cilantro
2 chile peppers , seeded and diced
vegetable oil for frying

In this recipe, the Brussels sprouts are coated in a crispy batter made with chickpea flour and spices, then deep-fried until golden brown. Instructions

1.Wash the Brussels sprouts and trim off the ends. Cut them in half if they are large.
2.In a large bowl, mix together chickpea flour, rice flour, ground coriander, ground cumin, baking powder, salt, and black pepper.
3.Gradually add in the water and whisk until a smooth batter is formed. Add more water if needed.
4.Add in the chopped cilantro and chiles, and mix.
5.Heat vegetable oil in a large pan over medium-high heat.
6.Dip each Brussels sprout half into the batter until coated and then drop it into the hot oil.
7.Fry the Brussels sprouts in batches, turning occasionally, until golden brown and crispy. Use a slotted spoon to remove the fried Brussels sprouts and place them on a plate lined with paper towels to drain excess oil.
8.Serve hot with your favorite dipping sauce.
