Ingredients

1 French baguette , cut into thin slices

2 garlic cloves , quartered
6 ounces mozzarella cheese , sliced very thin
4 -6 sun-dried tomatoes ( not packed in oil )

Instructions

1.Preheat oven to 400°F.
2.Place bread slices on baking sheets; brush with oil, and sprinkle with salt and pepper.
3.Bake in oven for 6-8 minutes, or until toasted.
4.Rub bread slices with garlic cloves.
5.Layer mozzarella cheese slices on top of bread slices.
6.Place sun-dried tomatoes on top of mozzarella cheese.
7.Brush additional olive oil on top of the sun-dried tomatoes.
8.Bake in oven for 5-6 minutes, or until cheese is melted.
9.To make the pesto, combine garlic cloves, basil leaves, sun-dried tomatoes, pine nuts, parmesan cheese and olive oil in the bowl of a food processor. Process for several seconds until smooth.
10.Top melted cheese with a dollop of pesto sauce.
11.Serve warm.
