1 medium cucumber ( seeded and chopped )
3 plum tomatoes ( seeded and chopped )
1 pint grape tomatoes ( cut in half , sustitute for plum tomatoes )
1/4 teaspoon salt
1/8 teaspoon pepper

Instructions

1.In a medium saucepan, bring the water and rice to a boil over high heat.
