Ingredients

1/4 cup unbleached white sugar

1/4 teaspoon ground cardamom
1 can coconut milk ( regular or light )
1 1/3 cups milk ( soy milk or rice milk can be substituted )
1 egg ( or non-dairy egg substitute )
1 teaspoon almond extract
toasted slivered almonds ( optional ) or toasted sliced almonds ( optional )

Instructions

1.Preheat the oven to 350°F (175°C).

5.Add the coconut milk, milk, egg, and almond extract, whisking until well blended.
6.Pour the coconut milk mixture over the rice in the pie dish.
7.Cover the dish with foil and bake for 1 hour.
8.Remove the foil and bake for an additional 15-20 minutes, until the pudding is set.
9.Serve warm or at room temperature, sprinkled with toasted almonds if desired.
