Ingredients

1 cup uncooked brown rice
2 1/4 cups chicken stock
1/2 teaspoon salt
1 teaspoon butter
cooked brown rice , as above
2 tablespoons olive oil
1/2 cup mushroom , chopped
1/2 cup celery , chopped
1/2 cup onion , chopped
2 tablespoons sliced dried garlic or 2 tablespoons fresh smashed garlic
1/2 teaspoon celery salt
1/2 - 1 teaspoon lemongrass and chili spice mix
1/2 cup roasted red pepper , chopped ( optional )

Instructions

1.Rinse the brown rice under running water in a colander until the water is clear.
2.In a pot, bring the chicken stock, salt, and butter to a boil.
3.Add the brown rice and stir.
4.Reduce the heat and cover. Cook for 45-50 minutes.
5.Heat a pan with olive oil and add mushroom, celery, onion, sliced dried garlic or fresh smashed garlic. Saute for 5 minutes.
6.Add the celery salt, lemongrass and chili spice mix to the skillet and toss.
7.Add the cooked brown rice and roasted red pepper. Stir until well combined.
8.Season with salt and pepper.
9.Serve hot and enjoy!
