Ingredients

2 large onions
1/2 cup oil
3 cups persian rice
1/4 kg carrot , cut into matchsticks
1 tablespoon sugar
salt & pepper
8 chicken drumsticks or 1/2 kg of cubed beef
Osh Pulao is a traditional dish from Bukhara, Uzbekistan. It is a nutritious rice dish that is a variation of the popular rice pilaf. This dish is made with brown rice, which is more nutritious than white rice. The dish also includes healthy vegetables such as carrots. Meat can be either chicken or beef, which provides a complete meal. The result is a fulfilling and savory dish that is perfect for a hearty family meal.

Instructions

1.Wash rice thoroughly until water runs clear. Soak rice in a pot of cold water for 1 hour.
2.Slice 1 onion into thin slices while dicing the other onion.
3.Heat the oil in a large pot and fry the sliced onion until golden brown. Remove from pot and set aside.
4.Add the diced onion to the pot and cook until translucent. Add the carrot and fry for a few minutes.
5.Add the meat and cook until no longer pink.
6.Drain the rice and add it to the pot. Add enough water to cover the rice by 1 inch.
7.Add salt and pepper to taste along with sugar. Bring to a boil and then reduce heat to low and cover the pot. Cook for about 30 minutes or until the rice is done.
8.Garnish with the fried onions and serve hot.
