4 -5 cups water
2 tablespoons natural bran
2 tablespoons wheat flour
2 tablespoons semolina
4 tablespoons water , divided
1/4 teaspoon olive oil
2 tablespoons mushrooms
2 tablespoons spinach , blanched
3/4 teaspoon salt , to taste
1 pinch black pepper
3 tablespoons mangoes , diced
1 tablespoon onion , chopped
1 teaspoon fresh coriander leaves , chopped
1 tablespoon tomatoes , pulp
1 tablespoon cucumber , chopped

Instructions

1.Boil the black peppercorns, bay leaf, onion, fresh carrot, celery, leeks/spring onions, blanched tomatoes, and water in a large pot for 20 minutes.

3.In a separate bowl, mix together the natural bran, wheat flour, semolina, and 2 tablespoons of water to form a dough.

5.Spread the dough into a square shape and place the mushroom and spinach filling in the center. Fold the sides of the dough to make a parcel.

7.For the mango salsa, mix together diced mangoes, chopped onion, fresh coriander leaves, tomato pulp, chopped cucumber, salt, lemon juice and a pinch of black pepper.
8.Serve the brown parcel hot with mango salsa on top.
