Ingredients

16 corn tortillas
2 -3 lbs raw hamburger ( use 3 lbs if you want more meaty filling )
1 -2 small onion , peeled and diced
2 tablespoons cumin ( more or less to taste )
4 tablespoons chili powder ( more or less to taste )
1 1/2 tablespoons Mexican oregano ( more or less to taste )
2 teaspoons ground coriander ( optional )
3 tablespoons garlic powder ( more or less to taste )
salt and pepper , as desired
4 cups shredded cheddar cheese
3 1/2 cups canned red enchilada sauce ( Rotel , El Pato or your choice of brands )
2 1/2 cups sliced ripe olives ( optional ) or 2 1/2 cups pitted ripe olives ( optional )
2 1/2 cups finely chopped scallions ( optional )
Brother Steve's Deluxe Enchiladas are a beloved Tex-Mex dish that are sure to please a crowd. The seasoned beef filling, smothered in red enchilada sauce and cheese, make for the perfect combination of flavors. Whether served as a main course with a side salad, or as part of a buffet-style spread, these enchiladas are sure to be a crowd-pleaser.

Instructions

1.Preheat oven to 375°F.
2.Brown the onion and hamburger meat together until cooked through, then drain the excess fat.
3.Add in cumin, chili powder, oregano, coriander, garlic powder, salt, and pepper, then stir until combined.
4.Add 1 cup of shredded cheese to the meat mixture and stir until the cheese is melted.
5.In a separate bowl, mix together the enchilada sauce, olives, and scallions.
6.Fill each corn tortilla with 1-2 tablespoons of the meat mixture, then roll the tortilla tightly and place it seam-side down in a greased 9x13 baking dish.
7.Pour the enchilada sauce mixture over the rolled tortillas, then sprinkle the remaining cheese on top.
8.Cover the dish with foil and bake for 25 minutes.
9.Remove the foil and bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
