Ingredients

1/2 cup boiling water ( optional )
1/2 cup dried porcini mushrooms , in pieces ( optional )
3 cups water
1/2 teaspoon salt
1 cup cornmeal
2 tablespoons olive oil
1 1/2 cups mushrooms , diced ( use 2 cups if you omit the porcini )
1 large garlic clove , minced
1 tablespoon dry white wine
1/8 teaspoon salt
1/2 cup mozzarella cheese , shredded
1/2 cup smoked cheddar cheese or 1/2 cup mild provolone cheese , shredded
ground black pepper

Instructions

1.In a small bowl, pour the boiling water over the dried porcini mushrooms, set aside for 20 minutes until softened.
2.Preheat the broiler.
3.In a medium pot, bring the 3 cups of water and 1/2 tsp of salt to a boil.
4.Gradually whisk in the cornmeal.
5.Set the heat to low, cover the pot and simmer for about 10 minutes.
6.Stir occasionally.
7.Drain the porcini mushrooms, reserving the soaking liquid.
8.In a large skillet, heat the olive oil and add the mushrooms, cook until they are softened.
9.Add the garlic and cook for about 1 minute.
10.Stir in the porcini mushrooms, the soaking liquid, white wine, salt and black pepper.
11.Cook for 2 minutes until the liquid is reduced by half.
12.Spread the polenta on a baking sheet, and pour the mushroom sauce over it.
13.Sprinkle with the cheese.
14.Broil for about 5-6 minutes until the cheese is melted and bubbly.
