Ingredients

Instructions

1.In a large bowl, combine minced garlic, 2 tablespoons of olive oil, coriander seeds, 1-3 teaspoon red pepper flakes, sherry, and salt and pepper to taste.
2.Add the lamb in bite-sized pieces, tossing to coat.
3.Cover and allow to marinate for 2-4 hours or overnight in the refrigerator.
4.Thread lamb onto skewers, alternating with red onion, red bell peppers, dried apricots, and green olives.
5.Preheat broiler on high, and adjust oven rack to the top position.
6.Place skewers on a broiler pan and broil for 8-10 minutes, or until lamb is cooked through and vegetables are slightly charred, turning once about halfway through.
