Ingredients

2 bunches Broccolini
4 shallots ( finely sliced )
1 garlic clove ( finely chopped )
25 g butter
50 g plain flour ( all purpose )
120 ml white wine
100 ml cream
100 ml milk
1 tablespoon Dijon mustard
1 tablespoon parsley ( chopped )
1 cup parmesan cheese ( shaved )
extra virgin olive oil

Instructions

1.Preheat the oven to 190 C (375 F).
2.Bring salted water to a boil in a large pot. Add the broccolini and blanch it for about 4 minutes until it's tender.
3.Remove the broccolini from the water and put it in a bowl of ice-cold water for 2 minutes; drain the water and set aside.
4.In a pan, on medium heat, add the butter, cream, milk, white wine, garlic, and shallots; let it cook for about 5-7 minutes until it starts to bubble.
5.Mix the plain flour with the dijon mustard in a separate bowl; then add it in with the shallot mixture. Let the mixture cook until thickened, stirring often.
6.Remove the mixture from heat, and add the chopped parsley.
7.Brush a baking dish with oil, then place the broccolini in it. Pour the mixture over the broccolini, then sprinkle with shaved parmesan cheese.
8.Bake for around 20-25 minutes or until it becomes golden.
