Instructions

1.Preheat the oven to 375°F (190°C).
2.In a saucepan, melt butter and cook onion for 3-4 minutes until translucent.
3.Add garlic and thyme and cook for another minute.
4.Add rice, stir and cook for 3-4 minutes until it starts to brown.
5.Add flour and chicken broth. Mix well and bring to a boil.
6.Let it simmer for 5-6 minutes until the liquid is reduced by half.
7.Add broccoli and cook for another 3-4 minutes.
8.Add milk, 2 tablespoons of grated parmesan cheese, and lemon zest. Mix well and cook until the cheese is melted.
9.Season with salt and pepper.
10.Remove the saucepan from the heat and transfer the mixture to a baking dish.
11.In a mixing bowl, combine dried breadcrumbs, 1/4 cup grated parmesan cheese, 2 tablespoons melted butter, and parsley. Mix well.
12.Spread the breadcrumb mixture over the top of the rice mixture in the baking dish.
13.Bake for 25-30 minutes until golden brown and crispy.
