Ingredients

2 lbs fresh rapini
4 sun-dried tomatoes , sliced
1/4 cup olive oil
4 -6 garlic cloves , minced
water or chicken stock , for moisture
salt and pepper
crushed red pepper flakes
Broccoli rabe, also called rapini, is a popular vegetable in Italian cooking. This leafy green has a slightly bitter taste and is packed with nutrients. Instructions

1.Clean, trim and blanch the broccoli rabe for 2-3 minutes in boiling salted water. Remove and transfer to an ice bath.
2.Drain and set aside the broccoli rabe.
3.Heat olive oil in a large saute pan over medium-high heat. Add garlic and crushed red pepper flakes and saute for 1-2 minutes or until fragrant.
4.Add sun-dried tomatoes and saute for an additional minute.
5.Add the broccoli rabe and a splash of water or chicken stock to the saute pan.
6.Cover and let cook for 3-4 minutes.
7.Remove from heat and season with salt and pepper to taste.
