4 cups heavy cream ( Tempered )
1 dash ground nutmeg
2 tablespoons fresh thyme ( Chopped )
2 tablespoons winter savory ( Chopped )
1/4 cup parsley ( Chopped )
12 ounces cheddar cheese ( Celtic Grated )
This Broccoli Rabb, Guinness Black Lager and Celtic Cheaddar Bisque is a hearty and warming soup that is perfect for cold winter nights. Instructions

1.In a large pot, cook the bacon over medium heat until just crisp.
2.Remove the bacon from the pot and set aside on a paper towel-lined plate.
3.Add the bay leaves, leeks, serrano pepper, and garlic to the pot and cook, stirring occasionally, for 10 minutes over low heat until the vegetables are softened.
4.Add the broccoli raab, salt, and white pepper to the pot and cook, stirring occasionally, for 5 minutes.
5.Sprinkle the flour over the vegetables and stir until evenly coated.
6.Pour in the Guinness Black Lager and chicken stock, increase the heat to medium-high, and bring to a boil.
7.Reduce the heat to low and simmer for 10 minutes.
8.Remove the bay leaves from the pot and puree the soup in a blender until smooth.
9.Return the soup to the pot and stir in the heavy cream, nutmeg, thyme, winter savory, and parsley.
10.Heat the soup over low heat until warmed through.
11.Serve the soup hot, topped with the grated Celtic cheddar cheese and bacon.
