Ingredients

2 packages active dry yeast
2 teaspoons sugar
1/4 cup warm water
1 1/2 cups stone-ground cornmeal
additional stone-ground cornmeal
2 teaspoons salt
1 cup boiling water
1/4 cup unsalted butter , melted and cooled
2 cups all-purpose flour , plus
more all-purpose flour
extra virgin olive oil , for brushing
1 tablespoon coarse salt
Broa cornbread is a traditional Portuguese bread that has been enjoyed for centuries. It is a staple food in Portuguese households and is often served with soup, stew, or fish dishes. Broa is made with cornmeal instead of wheat flour, which gives it a distinctive flavor and texture that sets it apart from other bread types. Instructions

1.In a small bowl, dissolve the yeast and sugar in 1/4 cup of warm water. Let the mixture stand for 5 minutes, or until a creamy layer appears on top.
2.In a large mixing bowl, mix together 1 1/2 cups of cornmeal, salt and boiling water, and whisk until creamy, then let it cool down.
3.Next, add in the cooled melted butter, yeast mixture, and 2 cups of all-purpose flour, to make a smooth dough.
4.Knead the dough by hand for 10 minutes, adding more flour (if required) to make it less sticky and more manageable.
5.Cover the bowl, and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
6.Preheat the oven to 350°F and lightly grease a Dutch oven.
7.Knead the dough again, then shape it into a round loaf, and set it in the Dutch oven for 30 minutes.
8.Brush a little olive oil on top of the loaf and sprinkle salt over it. Bake the bread for 45 minutes, or until golden brown with a crispy crust. Remove it from the oven and let it cool down before serving.
