Ingredients

2 tablespoons oil , divided , or as needed
1/2 yellow onion , chopped
8 flour tortillas
1 can refried beans
4 eggs
1 package shredded Cheddar cheese
1 can chopped green chilies
Mexican Egg Pizza is the perfect way to start your day with a new twist! It is a great way to mix up your breakfast routine and try something new and exciting. This recipe does not require a lot of ingredients and is super easy to make, perfect for when you are short on time.

Instructions

1.Preheat oven to 375°F (190°C).
2.In a skillet, heat 1 tablespoon of oil on medium heat and cook the chopped yellow onion until soft and golden.
3.Spread 2 tablespoons of refried beans on each of the 8 flour tortillas and place them on a baking sheet.
4.Beat the eggs in a separate bowl and scramble them in the same skillet as the onion. Once the eggs are cooked well, put equal portions of scrambled eggs on top of each tortilla.
5.Next, sprinkle each tortilla with the shredded cheddar cheese and top them with the chopped green chilies. Drizzle the top with the remaining oil.
6.Bake in the preheated oven for 5-7 minutes, or until the cheese has melted and the tortillas are crispy. Serve immediately!
