Ingredients

1 1/2 lbs braising steak
1 pint english ale
1 pint water ( approximately )
2 beef bouillon cubes
2 tablespoons plain flour
2 large onions , peeled and diced
cooking oil or beef dripping
2 teaspoons English mustard
salt and pepper
12 ounces ready made shortcrust pastry
8 tablespoons ready-made mashed potatoes , approx
6 -8 ounces Stilton cheese , crumbled
1 ounce butter , for the pie topping
British Open Top Steak, Ale and Stilton Pub Style Pies are a popular dish in the UK, particularly in traditional style pubs. This rich and hearty dish is made with tender pieces of braising steak, English ale, onions, and Stilton cheese all baked under a layer of mashed potato. Perfect for cold autumn or winter evenings, these comforting pies provide a warm and hearty meal. Although high in calories, it's certainly worth indulging in as an occasional treat.

Instructions

1.Preheat the oven to 180°C (160°C if using a fan assisted oven).
2.Cut the braising steak into cubes, stir in 2 tablespoons of plain flour and set aside.
3.In a large saucepan, heat up the cooking oil or beef dripping. Add diced onions and cook until they are golden brown, then add the beef and fry for 4 minutes or until brown.
4.Pour in a pint of English ale and 1 pint of water ensuring the meat is covered, add 2 beef bouillon cubes, the English mustard, salt and pepper. Bring to the boil then reduce heat to simmer.
5.After 2 to 3 hours your steak should be 'melting' and tender. Divide the mixture between 4 individual pie dishes, ensuring they are 3/4 full. Top each pie with 2 tablespoons of mashed potato, spreading it out so that it covers the mixture beneath in a thin layer.
6.Top that with crumbled Stilton cheese and then finally another 2 tablespoons of mashed potato (spread out thinly once again).
7.Finish with a small knob of butter on the top of each pie. Place the pies on a baking tray and bake in the center of a preheated oven, until the potatoes are golden brown (Approx 25-35 minutes).

PROS

The steak pies are hearty and perfect for a comforting meal.

Additionally, the warmth and aroma of the ale added to the pie makes it perfect for cold autumn or winter evenings.

CONS

The dish is high in calories and fat, therefore, not the best option for those monitoring their calorie and fat intake.

HEALTH & BENEFITS

Although this recipe is not the healthiest, it does provide a good source of iron through the use of steak. Additionally, the use of onion, mustard, and Stilton cheese all provide nutritional benefits.
