Ingredients

16 dried pears
400 ml red wine
1 stick cinnamon
60 g granulated sugar
1 clove
2 tablespoons honey
1 tablespoon butter
lemon juice
200 ml milk
50 g rice
/ 2 t butter
1/4 cup sugar
1 tablespoon kefir or 1 tablespoon yogurt
2 tablespoons whipped cream
granulated sugar
walnuts , freshly roasted
angelica , finely chopped

Instructions

1.Bring red wine to a boil in a pot.
2.Add cinnamon stick, granulated sugar, clove, honey, lemon juice, and butter.
3.When sugar has fully dissolved, reduce to simmer.
4.Add the dried pears and let simmer for 45-50 minutes.
5.Rinse the rice until the water runs clear, then place it in a pot.
6.Add milk, butter and sugar to the pot, then cook on low heat for 15-20 minutes.
7.Remove the rice from the heat and let it sit for another 5-10 minutes.
8.Mix the kefir (or yogurt) and whipped cream together in a separate bowl until light and frothy.
9.Place the rice pudding in a bowl and add the poached dried pears.
10.Pour the reduced spice wine mixture over the pears, and top with the kefir (or yogurt) whipped cream mixture.
11.Garnish with walnuts and chopped angelica. Serve chilled or at room temperature.
