Ingredients

1 large eggplant

4 canned tomatoes or 2 big fresh tomatoes , chopped
3 -6 green chilies ( depending on how hot you like it ! )
1 cardamom
2 cloves

Instructions

1.Prick the eggplant with a fork and roast on the stovetop or grill. Once evenly roasted, mash and set aside.

3.Add the mashed eggplant, chopped tomatoes, cardamom, and cloves to the pan and mix well.
4.Cook on medium heat for 10-15 minutes or until the mix turns dry.
5.Remove from heat and serve hot with rice or roti.
