4 -5 medium brinjals
2 medium potatoes
2 tablespoons refined flour
1 tablespoon cornflour
salt
1/2 teaspoon black pepper
2 tablespoons dark soy sauce
oil , to fry
2 red capsicums
2 tomatoes
4 -5 green onions
3 -4 garlic cloves
2 -3 tablespoons tomato ketchup
1 tablespoon soy sauce
2 green chilies
1 teaspoon green chili sauce
1 pinch ajinomoto
1 tablespoon vinegar

Instructions

1.Slice the brinjals and potatoes vertically into thin pieces and marinate them with a mixture of refined flour, cornflour, salt, black pepper, and dark soy sauce.
2.Heat oil in a wok and fry the marinated brinjal and potato slices until golden brown. Set aside.
3.In the same wok, add sliced red capsicums, chopped tomatoes, chopped green onions, minced garlic, tomato ketchup, soy sauce, chopped green chilies, green chili sauce, ajinomoto, and vinegar. Stir fry for a few minutes.
4.Add the fried brinjal and potato slices to the wok and mix well. Serve hot.
