Ingredients

1 gallon apple cider
2 quarts water
1 cup kosher salt
3/4 cup sugar
2 whole cloves
1 tablespoon peppercorn
2 bay leaves
2 small dried hot red chili peppers
2 tablespoons thyme
4 garlic cloves
1 turkey , Brined
12 tablespoons olive oil
1 cup sage , chopped
salt , DO NOT ADD ANY
pepper , to taste

Instructions

1.Combine apple cider, water, kosher salt, sugar, whole cloves, peppercorn, bay leaves, dried red chili peppers, thyme, and garlic in a large pot.

3.Place turkey in a large container and pour the cooled brine mixture over it, making sure it is fully submerged.
4.Cover and refrigerate turkey for at least 8 hours or overnight, flipping it over once halfway through the brine time.
5.Preheat oven to 375°F (190°C).
6.Remove turkey from brine, discarding the brine, and pat the turkey dry with paper towels.
7.Rub the turkey with olive oil and sprinkle with salt and pepper.
8.Stuff the turkey with sausage stuffing and place it on a roasting pan.
9.Roast turkey for about 3 to 4 hours, or until the internal temperature reaches 165°F (74°C).
10.Let the turkey rest for about 20 minutes before carving and serving.
