Ingredients

2 fresh anaheim chilies
2 small tomatoes
1 fresh lemongrass , stalk
3 tablespoons fish sauce

2 tablespoons finely chopped of fresh mint
1 tablespoon honey
3 1/2 teaspoons minced garlic
1 teaspoon serrano chili , minced
8 tablespoons olive oil
12 ounces beef tenderloin or 12 ounces other steak
1 teaspoon fresh ground pepper
1 small romaine lettuce head , torn into bite sized pieces
1 small radicchio , head
1 small arugula , head ( NOTE . i use the mixed blend already washed from supermarket )

Instructions

1.Preheat grill to high heat.
2.Grill chilies until charred all over. Place in a bowl and cover with plastic wrap. Let cool.
3.Peel and seed chilies. Cut into thin strips.
4.Cut tomatoes into 1-inch pieces.
5.Cut off the tough, outer layers of the lemongrass. Cut the tender inner core into thin rounds.
6.In a bowl, whisk together fish sauce, lime juice, mint, honey, garlic, and serrano chili.
7.Whisk in olive oil in a slow, steady stream.
8.Toss beef with pepper and 2 tablespoons of dressing.
9.Grill beef until the desired doneness. Let rest for a few minutes before slicing.
10.In a large bowl, toss lettuce, radicchio, and arugula with remaining dressing.
11.Top the salad with beef, chilies, tomatoes, and lemongrass rounds.
