Ingredients

pasta ( any large shape or shells )
2 cloves garlic
1 onion
2 chilies
galangal
1 tablespoon butter
pumpkin
eggplant ( we have the long skinny Lebanese/Asian sort )
basil , fresh
red capsicum
tofu , cut into cubes
kangkong , shredded ( or other dark green leafy vegetable )
1 tablespoon olive oil
1 tablespoon soy sauce
feta
mozzarella cheese
Bridget's Vegetable Pasta Bake is a delicious and healthy meal that you can prepare when you want to include more vegetables in your diet. It's a great way to introduce new vegetables to fussy eaters as the pasta and cheese make it look and feel like a comfort food. Instructions

1.Preheat your oven to 200 C
2.Cook the pasta as per packet instructions and drain
3.In a large frying pan, add olive oil and butter then sauté the garlic, onion, and chilies for 2 minutes before adding galangal. Cook for another 2 minutes
4.Add in your diced pumpkin, eggplant, and capsicum. Cook for a few minutes until they start to get soft
5.Now add in tofu and kangkong leaves, red pesto sauce, and soy sauce. Stir-fry until the vegetables are coated and the sauce is heated through
6.Add pasta to the frying pan and toss everything together. Season with salt, pepper and rosemary
7.Transfer the pasta mixture to an ovenproof dish and top with crumbled feta and grated mozzarella cheese. Bake for around 15 minutes until cheese is melted and golden brown.
