Ingredients

2 cooked turkey escalopes or 2 cooked chicken breasts , diced
1/2 onion , peeled and diced
1 -2 garlic clove , peeled and minced
2 teaspoons oil , sunflower
1 can tomatoes
1/2 lemon , juice of
2 tablespoons golden sultana raisins
2 tablespoons desiccated coconut
1 tablespoon curry powder , of your choice
1/2 teaspoon cumin
1/2 teaspoon sweet paprika
1/4 pint vegetable stock or 1/4 pint chicken stock
salt and pepper , to taste
yoghurt ( optional )

Instructions

1.Heat the oil in a frying pan on high heat.
2.Add onion and garlic, fry for 1-2 minutes.
3.Add curry powder, sweet paprika, cumin, and fry for another 1-2 minutes.
4.Add stock, chopped tomatoes and raisins, and cook until sauce is reduced.
5.Add in diced turkey/chicken, lemon juice, desiccated coconut and cook for a further 5-10 minutes.
6.Season with salt and pepper to taste.
7.Serve with rice and optional yoghurt on top.
