Instructions

1.In a large pot, heat 1/4 cup of olive oil over medium heat.
2.Saute onions and garlic until onions are translucent.
3.Add the okra and stir for 5 minutes.
4.Add the zucchini and eggplant and mix it well with the onions and okra.
5.Add chopped tomatoes, parsley, salt, and pepper.
6.Mix well, cover and let simmer for about 30 minutes.
7.Serve hot with rice or bread.
