Instructions

1.In a skillet over medium heat, sauté the onions in olive oil until soft.
2.Add salt, pepper and spinach and sauté for a few minutes until the spinach is wilted.
3.Butter a 9 x 13-inch baking dish and place a layer of bread cubes in the bottom.
4.Add half of the spinach mixture over the bread and top with half of the ham and cheese.
5.Repeat the layers with the remaining spinach, ham and cheese.
6.In a bowl, whisk together the eggs, half-and-half, salt and pepper.
7.Pour the egg mixture over the bread layers.
8.Cover and refrigerate overnight, allowing the bread to soak up the egg mixture.
9.Remove the dish from the refrigerator and set it on the counter for 30 minutes.
10.Preheat the oven to 350°F.
11.Bake uncovered for approximately 45-50 minutes or until golden and set in the middle.
12.Let it sit for 5-10 minutes before serving.
