4 slices streaky bacon , sliced
1 small onion , roughly chopped
4 small cooked potatoes , cubed
4 small tomatoes , halved
4 medium eggs
125 g cheddar cheese , grated
salt & freshly ground black pepper

Instructions

1.Preheat the oven to 190°C (375°F / Gas Mark 5). Grease a baking dish with olive oil.
2.Heat the remaining olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and bacon, and cook for 5 minutes or until the mushrooms are tender and the bacon is crispy.
3.Add the chopped onion and potatoes, and cook for a further 5 minutes, stirring occasionally.
4.Spread the mixture evenly into the prepared baking dish. Arrange the halved tomatoes on top.
5.Crack the eggs over the top of the tomatoes. Sprinkle grated cheddar cheese, salt, and pepper over the eggs.
6.Bake for 20-25 minutes or until the eggs are set and the cheese is melted and bubbly. Garnish with chives before serving.
