1 lb pork tenderloin , trimmed of fat
1 1/4 teaspoons salt

1 large egg
3 slices white bread , processed into crumbs ( about 2 cups )
2 tablespoons freshly grated parmesan cheese
3 tablespoons olive oil
2 tablespoons unsalted butter
1/4 cup chopped onion
2 1/2 cups sliced white button mushrooms
1 tablespoon minced fresh chives
1/2 lemon , juice of

Instructions

9.In the same skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium-high heat.
