Ingredients

4 ounces long grain and wild rice blend
1 chicken stock cube
2 salmon fillets
2 teaspoons coarse grain mustard
2 ounces fresh breadcrumbs
1 teaspoon mixed herbs
1/4 ounce flat leaf parsley , chopped

Instructions

1.Preheat the oven to 200°C (180°C fan) gas mark 6.
2.Cook the rice with the chicken stock cube according to the package instructions and keep warm.
3.Lay the salmon fillets in a single layer in a roasting tin.
4.Spread a teaspoon of mustard over the top of each fillet.
5.Mix the breadcrumbs, herbs and parsley together and scatter over the mustard.
6.Roast for 15-18 minutes until the top is golden and the salmon is cooked through.
7.Serve with the rice.
