Instructions

1.Mix together hot water, milk, honey, and salt in a large bowl.
2.Add freshly milled flour, flaxseed meal, instant yeast, and softened butter to the bowl. Stir the mixture together until it forms a dough.
3.Cover the bowl with a damp tea towel and let it rest for 10-15 minutes.
4.Dust a clean work surface with cornmeal, then turn out the dough on the cornmeal and knead briefly.

6.Cover the discs with a damp tea towel and let them rest for 10-15 minutes.
7.Heat a griddle or cast-iron pan over medium heat and brush it with vegetable oil.
8.Cook the muffins for 6-8 minutes on each side, or until golden brown.
9.To serve, split the muffins in half with a fork and toast them until crispy.
