Bread Pudding (Capirotada) is a popular Mexican dessert with a history that dates back to the colonial era. At its core, the dish is based on bread, an ingredient imported to Mexico by Spanish colonizers. This dish reminded us of how, in the past, frugality necessitated the use of stale bread, and they made the most out of everything they had on hand. Today, the recipe is still going strong, particularly in Mexico. However, it has moved beyond its original bread origin, as now it features raisins, peanuts, and shredded cheese among the ingredients. Bread Pudding (Capirotada) is perfect for potlucks and for those who are trying to stick to a budget.

Instructions

1.Preheat oven to 350°F.
2.In a medium saucepan, heat water, brown sugar, and butter over low to medium heat, stirring occasionally until sugar has dissolved and butter has melted. Set aside.
3.Layer half of the bread cubes, half raisins, and peanuts in the bottom of a greased 13x9 inch baking dish. Repeat with remaining bread cubes, raisins, and peanuts. Pour sugar syrup slowly and evenly over the top of the dish. Press everything down with a spatula.
4.Top with shredded cheese and bake for 30 minutes, or until cheese is melted and golden brown.
