Ingredients

16 slices medium white bread
125 g butter , softened
100 g mixed dried fruit
4 medium eggs
150 ml double cream
150 ml 1 % low-fat milk
3 drops vanilla extract
50 g caster sugar
cinnamon
Bread and Butter Pudding French Toast Sandwiches combines two classic breakfast dishes into one delicious meal. This dish is perfect for those who love sweet and comforting breakfast foods. The soft and buttery bread is soaked in a rich mixture of cream, milk and eggs and baked to perfection. The addition of dried fruit gives the dish a sweet and fruity flavour. Instructions

1.Preheat the oven to 180C/160C fan/gas 4. Grease and line a 20cm square baking dish with baking parchment.
2.Spread one side of each slice of bread with butter and cut each slice in half diagonally to create triangle shapes.
3.Arrange half the slices of bread, buttered-side up, in the baking dish, overlapping slightly. Scatter over half the mixed dried fruit.
4.Arrange the remaining slices of bread on top, again buttered-side up and overlapping slightly. Scatter with the remaining mixed dried fruit.
5.In a bowl, whisk together the eggs, double cream, milk and vanilla extract until combined. Pour over the bread and press the bread down gently so it soaks up the liquid. Sprinkle with cinnamon and caster sugar.
6.Bake in the oven for 40-45 mins until golden brown.
7.Serve hot or cold as a sandwich with extra butter or your favourite jam.
