Instructions

1.Preheat the oven to 375°F/190°C.
2.Grease and line a jelly roll pan with parchment paper.
3.In a saucepan, combine milk, 1 cup of sugar, and butter.
4.Heat the mixture for about 12-14 minutes on low flame, stirring continuously and scraping the bottom of the pan to prevent burning.
5.Remove the saucepan from heat and stir in 1 tablespoon of vanilla extract followed by the finely ground cashew nuts and egg yolks.
6.Pour the mixture into the prepared jelly roll pan and smooth it out with a spatula.
7.In a separate mixing bowl, beat the egg whites until they form stiff peaks.
8.Slowly incorporate the remaining 1 cup of sugar and 1 teaspoon of vanilla extract into the beaten egg whites.
9.Continue to beat until stiff peaks form.
10.Pour the mixture on top of the pre-baked layer in the jelly roll pan, and even out the top with a spatula.
11.Bake the mixture in the oven for 25 minutes or until the top is golden brown.
12.Remove the jelly roll pan from the oven and cool for at least 10 minutes before unmoulding the cake.
13.Flip the cake onto parchment paper and remove the old parchment paper manually.
14.Spread the creme filling over the cake and roll it tightly to form a log cake.
15.Wrap the cake with cling wrap or aluminum foil and chill it in the refrigerator for at least 2 hours.
16.Once chilled, slice the cake into uniform pieces, and it is ready to serve.
