Instructions

1.Preheat oven to 375 degrees F. Grease a 15 by 10 by 1-inch jelly roll pan with butter.

3.Sift flour and cocoa powder together. Stir into egg yolk mixture to combine. Add vanilla extract and stir well.

8.Beat the heavy cream with 2 tablespoons of powdered sugar and the rum extract until stiff peaks form. Spread whipped cream over the cooled cake, leaving a 1/2-inch border around the edges.
9.Roll the cake up carefully and place it seam-side down on a plate. Sift the remaining powdered sugar over the top.
