Ingredients

1 turkey ( or , I used a 8 to 9 lb . turkey breast - NOT a turkey roast , though )
2 cups light rum ( to be traditional , use Brazilian Cachaca )
2 onions , diced
6 cloves garlic , chopped
4 ripe tomatoes , diced
1/2 cup olive oil
2 bay leaves
1 cup fresh lime juice
1/4 cup grated lime zest ( just the green part )
2 cups water
1/2 cup chopped green onion
1 cup chopped parsley

Instructions

1.Preheat oven to 325 degrees F (165 degrees C).
2.Rinse the turkey and pat dry with paper towels. Rest the turkey onto a roasting pan or baking dish.
3.In a blender or food processor, combine the rum, onions, garlic, tomatoes, olive oil, bay leaves, lime juice, and lime zest until they are well blended.
4.Pour mixture from blender over turkey. Turn to coat all sides. Add water to bottom of pan.
5.Bake for 3 to 4 hours, until the internal temperature of the turkey reaches 165 degrees F (75 degrees C).
6.Let turkey rest for 20 minutes before carving.
7.In a separate bowl, combine the green onion and parsley. Sprinkle over turkey before serving.
