Ingredients

1 tablespoon olive oil
3 cups onion , chopped
8 cloves garlic , chopped , divided
1 carrot , diced
3 teaspoons ground cumin
2 teaspoons salt
1 red bell pepper , diced
2 cans black beans , drained and rinsed
1/2 cup water
1 cup orange juice
1 pinch cayenne pepper , or to taste
Brazilian Black Bean Soup, also known as 'Feijão', is a traditional dish in Brazil that is popular throughout Latin America and the Caribbean. Instructions

1.In a large pot, heat olive oil over medium heat.
2.Add onions and 4 cloves of garlic and sauté for 5 minutes until the onion is translucent.
3.Add in diced carrots, ground cumin, salt, and diced red bell pepper.
4.Stir and cook for 5 minutes until the vegetables are tender.
5.Add in drained and rinsed black beans, water, and orange juice.
6.Add in cayenne pepper to taste.
7.Bring to a boil, then reduce to a simmer and cook for 30 minutes.
8.While the soup is cooking, mince the remaining 4 cloves of garlic.
9.In a small pan, heat 1 tsp of olive oil and add minced garlic, cooking until golden brown.
10.Add the garlic to the soup and stir.
11.Serve hot with optional topping of sour cream and chopped herbs.
