Ingredients

4 fresh bratwursts
1 bottle beer

2 tablespoons vegetable oil
1 lb fresh sauerkraut , rinsed , fully drained
2 tablespoons sugar
1/2 teaspoon salt

4 flour tortillas
1/4 cup honey dijon mustard
4 slices smoked swiss cheese

Instructions

1.In a large pot, boil the bratwursts in beer for 10 minutes. Then, remove them from the pot and set them aside.
2.In a separate skillet, heat the vegetable oil over medium heat and sauté the chopped onion until soft.
3.Add the sauerkraut, sugar, salt, and crushed red pepper flakes to the skillet with the onions and mix well. Cook for 5-7 minutes, or until the sauerkraut is heated through.
4.Spread a tablespoon of honey dijon mustard onto each of the 4 flour tortillas. Then, place a slice of smoked swiss cheese on each tortilla and top it with a bratwurst. Spoon the onion-sauerkraut mixture onto the bratwursts.
5.Roll up the tortillas and wrap them tightly in aluminum foil. Bake in a preheated 350°F (175°C) oven for 10-15 minutes, or until the cheese is melted and the tortillas are heated through. Serve hot.
